Kids Choc Chip Cookies - with a twist!

School is back and I have been thinking of things to add into the kids lunch boxes. An easy addition to any lunch box is a cookie or two - these ones definitely had the thumbs up from the kids (and the big kid!). They are additive free - but not entirely sugar free with the choc bits, but very tasty.  

INGREDIENTS (makes about 24)

  • 2 cups organic rolled oats
  • 1 cup wholemeal spelt flour
  • 2 tbs coconut flour
  • 1 egg beaten
  • 3/4 cup coconut sugar
  • 3/4 cup Nestle dark choc bits
  • 3/4 cup coconut oil (melted) 
  • 1 tsp aluminium free baking powder

METHOD

  • Preheat the oven to 180 C
  • Mix together all dry ingredients
  • Add egg and coconut oil to dry ingredients until combined 
  • Place small balls of the mixture (you'll need to squeeze it together as it is quite crumbly) on a lined tray
  • Bake for approx 15 minutes
  • Remove from the oven and allow to cool completely 
  • Store in an airtight jar once cooled

If your are going to keep the cookies for more than 3 days (or if its really hot) store them in the fridge - they will also stay nice and crunchy in there!
