Raw Peppermint Treats

I have always loved peppermint chocolate. The old After 8 Thin Mints were a favourite of mine as a kid - really pepperminty, and perfect for a sweet after dinner.

These little treats remind me of them as I have upped the peppermint essence – I find that most raw sweets I have bought just don’t have enough for me!!

INGREDIENTS (makes 24 small treats)

Base

  • 50g Almonds
  • 50g Macadamia nuts
  • 40g Medjool dates
  • 10g Raw cacao

Topping

  • 60g Flaked (or shaved) coconut
  • 30g Coconut butter
  • 70g Raw cashew nuts
  • 30g Rice Malt Syrup
  • 10g Coconut oil
  • 1-2 tsp Organic peppermint oil (to taste)

METHOD

 Base

  • Blend all the ingredients until smooth
  • Divide up the base into little patty pans – I used a mini muffin pan
  • Press into the tin and chill for 10 minutes in the freezer

 Topping

  • Blend all the ingredients until smooth
  • Divide up evenly and press on top of the base
  • Place tray into the fridge for at least 30 minutes

Enjoy them with a cup of tea after dinner…. Or any time!
