Ginger Vanilla Cookies

It's Christmas and everyone is indulging. The kids have been begging me to make cookies with them so this arvo I gave it a try! I substituted a few ingredients around (it was all I had in the cupboard.) They aren't super sweet, but very tasty.

INGREDIENTS

  • 1 cup white spelt flour
  • 1/2 cup coconut flour
  • 1/2 cup arrowroot flour
  • 2 egg yolks beaten
  • 140g coconut oil melted
  • 1/2 cup coconut sugar
  • 1/4 cup rice malt syrup
  • 1 tsp ginger powder
  • 1/2 tsp cinnamon powder
  • 1/2 tsp vanilla powder
  • 1/4 tsp nutmeg powder
  • 1 tbs water (if needed)

METHOD

  • Preheat the oven to 180C
  • Combine all the dry ingredients in a bowl.
  • Mix through the coconut oil, rice malt syrup and eggs. Mix until combined completely
  • Roll mixture out onto a clean bench about 1 cm thick and use cookie cutters to make the desired shapes. They can be crumbly so use a spatula to pick them up.
  • Place each shape onto baking paper
  • Bake for 12-15 minutes. Once cooked through cool completely and then you can decorate them!
