Fast Overnight Buckwheat Breakfast!

Overnight Buckwheat & Chia

When I know I need to get out the door quickly in the morning I prep-up one of my favourite and fast breakfasts'.  Overnight buckwheat groats soaked in almond milk. A little preparation goes a long way to ensure I'm not starving by 10am and looking for a sweet muffin treat! INGREDIENTS - makes 2 approx serves

  • 1/2 cup raw organic buckwheat groats
  • 1 cup almond milk (or non-dairy milk of you choice)
  • 1/2 tsp vanilla powder
  • 1/4 tsp cinnamon
  • 1 tbs chia seeds
Raw Buckwheat Groats

TO SERVE

  • 2 strawberries chopped
  • 1/4 cup blueberries
  • 1/4 cup shredded coconut
  • 1 tsp pumpkin seeds
  • 2 tbs Cocoyo yoghurt (or natural greek yoghurt)

METHOD

Place all the ingredients in a jar and stir to make sure its all covered. Place in the fridge overnight. When ready to eat top the jar with the strawberries, blueberries, yoghurt and sprinkle over pumpkin seeds then enjoy!

Some options if you want to mix it up include, bee pollen, crumbled walnuts, goji berries or cacao nibs. I sometimes add in camu camu powder and Maca into the almond milk for an added vitamin C and energy boost. It's so versatile and ensures you aren't left without something nutritious to eat when you're on the go.
