When we aren't in a mad rush in the morning I love to cook something special for the kids. We had the day off from school today and the request was for pancakes.
Now, I'm really not the best pancake maker, they often end up either too chewy or just a bit strange with my choice of ingredients. However this morning I managed to make pancakes than not only looked great and were full of protein, but were polished off rapidly by both kids - Success!!
- 1 cup wholemeal spelt flour
- 3 tbs quinoa flour
- 3/4 cup almond milk (or full fat organic milk)
- 1 egg
- 1/2 tsp vanilla powder
- 1 small banana pureed
- 1/4 tsp ground cinnamon
- 1-2 tbs Coconut Oil for cooking the pancakes
Add all the ingredients into a mixing bowl and mix until smooth. I used the Thermomix on speed 5 for 30 seconds. Add more almond milk if you want a lighter batter.
Add the coconut oil into a fry pan and melt on a medium heat. Add in a about 2 tablespoons of the batter at a time per pancake. Wait until bubbles appear on the top of the pancake, about 2 minutes, then flip to finish off. Continue till the batter is all used up.
I served these up with maple syrup, sliced banana and strawberries and Organic Vanilla 5am yoghurt. Makes 12 small pancakes.
